Air Potato-Crunchy Chestnut Flavor
From eastern Asia, this species yam is well used throughout Asia where it is boiled, fried, baked, mashed and added to soups or mixed with vinegar. Small ½ inch sized tubers are produced at the leaf axils giving it the name “aerial tuber”. (I think this is a name of a 70’s rock band or it should be.)The in ground tubers are best harvested in their 2nd year. Left in the ground they can grow up to 3 ft. long. Grows well in pots. The roots contain 20% starch and the flavor is similar to a crunchy water chestnut. Height to 10 feet. Easy to grow in sun or light shade.
